Many thanks to those of you who contributed to my Tour de Fresh bike trek this past fall. To refresh your memory, I participated in a 300+ mile bike ride beginning in the Smoky Mountains of North Carolina (beautiful, I might add), and ending in Atlanta, Georgia. However, the bike ride was simply a means to the end, promoting healthy eating in our youth and doing something to assist in this effort was the ultimate goal.
With childhood obesity on the rise, I am fortunate enough to have the support of both you and my organization to do our small part in reversing this trend. Through your generous contributions, 37 other riders and I were able to raise over $156,000 in total.
Birko partnered with Susan Hart, the Food Service Director for the South Routt County School District, to support healthy eating in our state. Last week your contributions helped place salad bars in two small Colorado mountain communities; one salad bar was placed in the elementary school in Yampa and one was placed in the middle/senior high school in Oak Creek. I had the pleasure of launching these new salad bars last week and seeing the joy on the children’s faces as they walked down the new and improved, top of the line salad bars to select their lunches.
