Birko and Sterilex® Products Protect Needle Injected Meats

HENDERSON, Colo. – Birko, a leader in providing food safety solutions to the protein industry, and Sterilex® Corp., which provides biofilm remediation products, have bundled two unique and patented chemistries to give processors a two-pronged solution to the challenge of shelf life and food safety in brine injected meats.

Birko’s Beefxide®, a patent-pending processing aid approved by the USDA, is recommended for application to meat prior to needling to reduce both pathogens and aerobic spoilage bacteria on meat surfaces. In testing at a further processor, Beefxide® was demonstrated effective in reducing bacterial load on beef trim before grinding without affecting color or flavor.

Sterilex’s® patented PerQuat™ Technology has proven efficacy in disinfecting brine injection systems and needles. In testing at a major U.S. poultry processor, Sterilex Ultra Disinfectant Cleaner and Sterilex Ultra Activator Solution (a liquid PerQuat™ solution) extended shelf life by over five days. Previous study under a USDA research grant showed the Sterilex formulation was “100% effective, providing total kill (of Listeria) and more than 90% biofilm removal.”

Dr. Elis Owens, Birko’s senior microbiologist/chemist, noted that needle tenderized and needle injected meats pose special challenges to processors. “The needling process has the potential to carry both pathogenic and spoilage bacteria below the surface of meat during processing,” Owens said. “Even cooking the meat may not entirely kill pathogens, especially if the meat is prepared rare or medium-rare.”

In addition to carrying spoilage organisms below the surface of the meat, tenderizing needles are notoriously difficult to clean, Owens said. “They’re also prone to colonization by biofilms resistant to normal cleaning and sanitation regimens, which can increase the prevalence of spoilage bacteria and result in a shorter shelf life.”

Sterilex® has the only product with EPA-registered claims to kill biofilm bacteria and remove biofilm currently on the market.
