Birko’s Meat Expertise

When it comes to protecting the safety of the food chain, Colorado-based Birko is the leader in helping protein companies harvest and process safer meat. For over 60 years we’ve been a preferred partner in best-of-class food safety for beef, poultry and pork through our environmentally safe chemistry, state-of-the-art equipment, and technical expertise. Birko has a long history of fighting foodborne pathogens in the protein industry, including E. coli, Salmonella and Listeria.

Birko’s expertise in the meat industry can be traced to our first products, an alkaline cleaner and a wash for cleaning and whitening edible tripe. Tripe Wash allowed our meat processing customers to increase revenue from their byproducts and is still manufactured in several formulations for use in federally-inspected meat plants.


Leading Organic Antimicrobials

In 1994, we became a food safety leader by introducing lactic acid as the first organic antimicrobial intervention in the meat industry. In 2011, our lactic acid-based antimicrobials Beefxide®, Porkxide™ and Chicxide™ were approved by the USDA for use as antimicrobial processing aids on beef, pork and poultry products, respectively. These interventions safely and effectively fight foodborne bacteria such as E. coli and Salmonella when applied to meat and poultry during processing. All components of the formulas are GRAS (Generally Recognized as Safe).

In addition to interventions, we hold many other patents focused specifically on serving the protein market, including our Frostlube™ technology for pork processing.


Cleaning and Sanitation

Birko provides cleaning and sanitation chemistry and service for slaughter and further processing. These are among the best, safest chemicals available. Over 50% of our formulations are considered environmentally responsible, which is the highest percentage of such product formulations of any company in the industry. What’s more, Birko is the only chemical company to offer an entire range of products free of butyl solvents.

As an additional service for our protein customers, Birko provides custom chemical blending. We develop specialty chemical formulations in our state-of-the-art laboratory and production facility, which can provide a cost savings for protein processors seeking to reduce overhead.


Specialty Equipment

Chad Equipment, LLC, a Birko company, is a specialty equipment manufacturer that serves small-to-large volume meat harvesting and processing operations. Chad’s state-of-the-art cabinet systems for harvest and processing are recognized around the world for their efficiency and water savings.

Chad pioneered the concepts of washing beef carcasses before evisceration, pasteurizing red meat carcasses and washing viscera tables and viscera pans using brushes and sprays. Chad’s patented hot water pasteurization system uses recirculated water to minimize water and steam usage and disposal costs. Its patent-pending WaterSmart technology reduces water usage in its carcass, head and tripe wash cabinets.
