Birko carries Puracs food-grade, lactate-based antimicrobials for use in fresh and further processed meats. These products can effectively extend shelf life and greatly inhibit the growth of Listeria, Salmonella and E. coli among others. When used in further processed meats, at an application rate of 3%, shelf life can be increased by up to 110%. Application rates are based on the original Oscar Mayer model. |

For use in a wide range of cooked, cured and fresh meat products such as sausage, hams, deli meats, ground beef and poultry. Sodium Lactate imparts a slight salty flavor to the product that contributes to taste. Potassium Lactate has little or no flavor characteristics.
