Background
Birko was asked to help a processor of natural poultry reduce their increasing Salmonella problem with
a goal of qualifying as a Category 1 plant under the new FSIS Salmonella Initiative. The plant was underperforming using a leading bacterial intervention product. Birko researched the plant’s Salmonella problem and developed a new intervention strategy that proved to work exceptionally well. Their outside
lab reported negatives for Salmonella spp., E. coli and other pathogenic bacteria. Since the adoption of ChicxideT.M. the plant has not reported a single case of Salmonella on product. A summary of that initial validation test is available on request from Birko.

Validated for Effectiveness
With renewed FSIS emphasis on Salmonella control a second validation test of Birko ChicxideT.M. was conducted at a well known university food science laboratory and observed for Birko Corporation by Dr. John Henson, California State University, Fresno. Using established protocols, healthy birds were raised, selected and conventionally slaughtered at an inspected facility, then taken to the microbiology lab where they were inoculated with a 106 cfu/ml of Salmonella spp. ChicxideT.M. was mixed at Birko’s prescribed application rate and applied for timed intervals using standard industry production techniques. Depending on the type of application Salmonella reductions of 1.3 log/ml to 2.3 log cfu/ml were recorded. This particular validation study is currently awaiting submittal for publication.

Application Flexibility
ChicxideT.M. can be effectively applied to birds in a number of ways and at several early points, post-evisceration, on a standard poultry line. Birko will work with your plant engineering department to determine the most appropriate application technique accommodating both line speed and existing equipment. Plants can usually begin using ChicxideT.M. for a minimal capital expense. Birko is also recommending the Cantrell Ram bird washing system as an additional application option.

Cost
Given the competitive nature of the poultry processing industry, Birko’s key consideration in the development of ChicxideT.M. was a reasonable application cost. Depending on plant volume ChicxideT.M.. application runs in the low pennies-per-bird range, considerably lower than less efficacious products.
